What are everyone's favorite types of bacon? and do you go crisp or floppy?

Mon, March 15, 2004 - 8:33 AMPork Bacon by Preferance, though turkey bacon will do in a pinch. Thick cut is best, by far, and peppered can be good. Hickory smoked also very important. Most important part is crispy, not quite crunchy. Floppy is only good when its buried in something else like a Philly Cheese-Steak.

I like it so floppy that most would call it undercooked. Hickory or other hardwood smoking is good. I like the maple cured as long as it is not too sweet.

Mon, March 15, 2004 - 9:11 AMI like it a half way between ultra floppy and crisp. I liek the fat portions to be cooked and a little crispy bat the meat parts still pliable. I love pork bacon hicory smoked and dredged through maple syrup at times, but mostly on it's own.

Side pork and Salt pork also have uses in recipes but not as stand alone bacon products. -

There is a review of various brands of bacon in Cook's Illistrated this month.
I don't remember the details, except that Niman Ranch is supposed to carry one of the ultimate types. It is expensive..say $8.99 lb for twelve ounces.
I'm sure you can order it online. Anyone with me???
Let's do our own bacon review.
BTW, What is a good brand of applewood smoked bacon and where can I buy it??

I actually like eating the spectrum of done-ness, savoring the different flavors that bacon takes on at it's different stages, but when I'm just wanting bacon, rare is where it's at!
